Christmas pudding trifle

Sorry for my month absence – Lets just say I was having a little blog holiday! But here I am back for a year of lots of new and exciting recipes and hopefully some fun adventures too :) So lets get into it…….

Do you still have Christmas pudding in the cupboard and don’t want to throw it out or are too ashamed to serve it to guests for desert when they come over, well be ashamed no more… introducing…. the Christmas pudding trifle. I actually created this trifle to bring in the 2011 with a glass of champagne with out guests. I shall add a disclaimer here, I took the photos of the trifle under the influence so please forgive any drop in quality.

This is very simple and in fact I am just going to tell you what I put in it, quantities can be amended depending on how you like it and to be honest you can also change the ingredients if you like. Thats what I love about trifles… it your own pasterpeice. So here is mine.

Ingredients by layer – starting from the bottom

  1. 1. Rasberry Jelly with Stawberries set in the jelly
  2. 2. 1 Christmas pudding
  3. 3. Brandy Custard
  4. (if you can’t find brandy custard in stores you an always make some. There are many recipes online)
  5. 4. Mangos
  6. 5. Whipped Cream (with added Vanilla)
  7. 6. Topped with chopped blanched almonds and some extra christmas pudding.

Here we are digging in – Happy 2011 all.. even if it is almost the end on January!
