Simple roast chicken pieces with veggies

Here is a yummy roast for you. The idea with this roast is to make it as EASY as possible. Throw everything in together. I lay the chicken pieces on top of the veggies.

-above- Prepared roast (before cooking)


  • Free Range Chicken Pieces
  • Red Peppers
  • Green Peppers
  • Potatoes
  • Sweet Potatoes
  • Onions
  • Carrots

Chicken Marinate

  • Fresh Rosemary
  • Garlic powder
  • Sweet Paprika
  • Marjoram
  • Cracked sea salt
  • Cracked pepper
  • Extra Virgin Olive Oil

Cooking time 1 hour.


When cutting the vegetables keep in mind that some require more cooking time then others so for those veggies that do not take all that long to cook e.g. Peppers I cut them on the larger size, and for those veggies that take longer to cook e.g. potatoes I cut smaller. The whole intention of this kind of roast, where you throw everything in together, is to make it as easy as possible. The goal is to cook everything at the same time for the same amount of time. EASY!

Marinate your chicken either the night before or at least a few hours before, the taste is much more intense if you do. If you are like me and often buy meat in bulk and use a deep freeze then why not marinate your chicken before freezing so when you are ready to cook it all you need to do is defrost.. too easy!
