Mixed mushroom and mozzarella pasta

Please forgive me but I am yet again going to bring you a recipe by Jamie Oliver. Yes, it is no surprise that I love this man.. why? Well it’s a combination of his cooking talent, his cheeky disposition and the fact that underneath his cheeky face is a great business man who knows what he is passionate about achieving and has the fearless attitude to go and get it.

He is not a chef who sits behind his awarded chef hat restaurant which only reaches those that can afford it and understand it. He gets out to the people and touches those who want to be influenced by food. He has managed to teach 1000s what cooking is all about. For him knowledge is power but he is not afraid to share this power, this is what I love about him. Naturally I don’t know the man personally but I hope to change this one day :)

Anyway I have been exploring some iPhone apps and one that I have come to really enjoy using is ‘Jamie Oliver 20 minute meals’. In the app you have a selection of different dishes on offer, from soups to risottos, to curries and even vegetarian dishes. It is very comprehensive with a section dedicated to “Jamie’s Kitchen Essentials” where he suggests tools and ingredients that are essential to a home cook and naturally it has a shopping list where you can add grocery items based on the ingredients in his recipes. What more could you want!

Introducing Mixed mushrooms and mozzarella pasta. (Listed in the app as Pappardelle with mixed mushroom and mozzarella.)


  • 500g pasta of choice – I used spiral pasta because thats what I had available. In the app Jamie uses Pappardelle
  • 500g Mixed mushrooms
  • 1 small bunch of flat leaf parsley
  • 1 garlic clove
  • 125g mozarella cheese
  • 80g Parmesan
  • 1 lemon
  • 4 tbsp crème fraîche
  • 2 knobs butter
  • Extra virgin olive oil
  • Olive oil
  • Salt and peper

How to:

  1. Bring salted water to the boil and cook pasta according to packet instructions.
  2. Brush any dirt off the mushrooms with a pastry brush then slice or tear them up into even size pieces.
  3. Pick the parsley leaves and put to one side. then finely chop the stalks. Peel and finely slice the garlic.
  4. Add butter and a bit of olive oil over high heat in large frying pan then throw in the parsley stalks, garlic and mushrooms. Add a pinch of salt and pepper to the pan then cook for 4-5 minutes, stirring until golden and softened.
  5. Once pasta has cooked, reserve  1 cup of cooking water before you drain it and add pasta to the pan of mushrooms.
  6. Add most of the grated Parmesan and most of the parsley leaves and stir well.
  7. Add 4 tbsp of crème fraîche to the pan, along with the mozzarella (in pieces or grated), grated lemon zest and a generous splash of the reserved pasta water. Turn up the heat so everything starts to bubble, then take off the heat.
  8. Squeeze in the juice from 1/4 of a lemon and toss gently. If the sauce is a bit thick add a splash or two of your reserved cooking water to thin it out.
  9. Serve sprinkled with the remaining parmesan, parsley, and a drizzle of extra virgin olive oil.
