Pesto and Chicken Fettuccine.

I really enjoy pesto, especially when we need something quick and easy to make of an evening. In this recipe I have added left over roast chicken. I took home made pesto and 2 left over chicken breasts from a roast I cooked during the week.

  1. Take the flesh off the bone and cut into ruffly chopped pieces. I put a little olive oil in a pan and saute the chicken just enough to warm through.
  2. In the meantime I bring salted water to the boil and cook the fettuccine as per packed instructions. (100gr of dry fettuccine per person constitutes one serve but suite yourself here. )
  3. For 100g of dry fettuccine I put 1 heaped tablespoon per person of pesto into a large bowl add hot chicken on top. (Adjust the pesto quantity depending on the amount of fettuccine you are cooking.)
  4. Drain pasta and add to chicken and pesto, mix well.
  5. Grate some extra Parmesan to the pasta. Place desired amount of pasta into serving plates, sprinkle with some fresh pine nuts on top and some extra freshly grated Parmesan.
