Meat and two veg!

Last night I was feeling like I really needed a steak and some veggies… but you know the traditional meat and 2 veg does not really appeal to me and quite frankly I couldn’t think of anything more boring! Eating to me needs to be interesting. I can’t stand putting food on a plate just for the hell of it. Why should we have to eat boring when we are trying to feed ourselves? Engage all the senses I say, surely that is more satisfying?

So here is my Meat and two veg solution!

What you’ll need – Serves 2

  • 2 steaks (of your choice)
  • 2 Focaccia breads
  • 1 Red pepper
  • 1 Zucchini
  • Chili infused extra virgin olive oil (or just plain extra virgin olive oil and cracked chili)
  • Salt

Thinly slice 1 zucchini and brush with chilli infused extra virgin olive oil and salt.

De-seed and slice 1 red pepper. Put a little chilli infused extra virgin olive oil into a hot pan, toss pepper through. You want to get the skin of the pepper nice and black because what you want to do is (while still hot – OUCH!) peal the skin off.

Cook your steak to your liking, I like mine medium rare. I think it is the best way to have them. Mr Foodie Goddess always takes care of steak cooking on the BBQ!

Cut your foccacia in half and grill both sides. Once grilled, drizzle some extra virgin olive oil on the inside of both slices of the focaccia. Assemble your foccacia and enjoy.
