Banana and Walnut cake

Isn’t banana and walnut cake the yummiest thing to have with a beautiful cafe late when you get a moment of down time. Ahh downtime… something I crave so much but let me tell you when those moments present themselves, even with such brevity I always take the opportunity to enjoy them with my favorite drink, a freshly made cafe late and if I am lucky a moist, yummy warm piece of freshly baked banana and walnut cake.

What you will need:

  • 125g Butter (melted)
  • 180g Dark Brown sugar
  • 350g Ripe bananas (mashed)
  • 100g Walnuts (ruffly chopped)
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 250g Flour
  • 1 tsp Baking powder
  • 3/4  tsp Bicarbonate of soda
  • 3 tsp warm milk
  • Pinch salt


Add melted butter (don’t boil it though) to sugar and whisk until combined then add mashed bananas and combine. Add eggs, vanilla, cinnamon and salt and mix well. Add sieved flour and baking powder and combine. Mix gently the Bicarbonate of soda with warm milk then add to mixture, combine well.

Scrape mixture into a buttered loaf tin and bake for between 50 to 60 mins in a 180 degree preheated oven. Test it is cooked by piercing it with a stick and make sure it is clean when you remove it.
