Baked Salmon with Green Beans and Pesto

This is another one of my Jamie specials.. God I love that man.. why??? who knows I just love the simplicity of how he prepares food. I don’t believe cooking needs to be complicated and over the top with ingredients for it to taste amazing. I love making salmon in this way, because not only is it easy, it is a meal all on its own. I hope you enjoy it too.

Ingredients

(serves 2)

  • 2 handful of green beans
  • 1 lemon
  • 2 x 200 Salmon fillets
  • 2 heaped tbs of green pesto (for homemade recipe)
  • Extra virgin olive oil
  • Salt and pepper.

How to…

Preheat oven to 200 °C.

Wash and trim you beans by cutting off the stalk ends but leave the wispy tips on.

Make 2 layers with some kitchen foil by folding one large peice in half. Make one for each piece of salmon. Place a handful of green beans in the middle of the foil and lay the salmon fillet (skin side down) on top. Put 1 tablespoon of pesto on each salmon fillet and a slice of lemon. Drizzle with olive oil and squeeze over the juice of half a lemon and season to taste.

Seal the foil into a parcels.

Place both parcels of salmon on baking tray and bake for 15 mins (in preheated oven).

Once cooked, let stand for a minute before opening the parcel. Check salmon is cooked through before serving.
