Squid Stuffed with Prawns

I love finding new ways to make seafood more interesting. I find that cooking seafood for so many people can go so terribly wrong.  Personally, I have always enjoyed eating other types of meats, I have no idea why and it is definitely not because I don’t think seafood is nice I just don’t always find it very exciting. As it happens both my husband and mother are piscean and they both happen to love seafood, I wonder if there is some astrological reason for this? So to keep a hard to please foodie (me) and a seafood lover happy I need to find that dish that will keep us both happy. So here is something that is sure to add that extra level of something different. Squid Stuffed with Prawns.


1 medium size potato, unpeeled

4 large squid (make sure the fish munger does a good job of cleaning them)

300g cooked prawns, peeled and chopped

2 egg yolks, lightly beaten

4 tablespoons double cream

250ml passata

1 handful of fresh flash leaf parsley, chopped

Freshly grated nutmeg, salt and pepper to taste

How to:

Cook the potato in salted, boiling water for 20 – 30 mins until tender, then drain, peel and mash with potato masher.

Meanwhile cook the squid tentacles in salted, boiling water for 3 minutes, then drain and chop.

Mix together the mashed potato, tentacles, prawns and egg yolks (lightly beaten) in a bowl and season with salt and pepper to taste.

Spoon the mixture into the body sacs of the squid, take care not to overfill. Secure with halved skewers.

Heat the extra virgin olive oil in a large frypan, on medium heat add the garlic and cook until browned.

Turn down to a low heat and add the stuffed squid to the pan and cook each side for about 15 mins each. 30 mins in total or until cooked.

Mix the passata and cream together. Season with freshly grated nutmeg, salt and cracked pepper to taste. Sprinkle mixture with parsley and pour over squid, heat through for a minute or so.

Serve and sprinkle with a little extra fresh parley.
